What can you do with a cup of almonds?

Last night, Anna and I made some almond milk, which left us with a lot of wet, almond grounds. And because Tuesday is one of my mornings to stay home with Anna, we had some time to put those almond grounds to good use...

We made little almond cakes with some added sugar, flour, butter and egg whites (so tasty with a cup of tea!), and turned the rest of the almond grounds into almond paste, using an equal amount of sugar, a little corn syrup to hold it together, and a teaspoon of almond extract.

I think it came out a little too sweet, so into the freezer it went to wait until we have more almond grounds from the next time we make almond milk.

ReplyDeleteThe macaroons look great - thanks. We have found all sorts of things to do with almond paste now that we have so much all the time. A couple days ago we made little almond-filled pastry heart pockets - just gearing up for Valentine's Day!
